Moong Dal Recipe
Legumes plays an important role in the diet. Rich inprotein, they make a useful meat substitute. Moong dal are generally sold in shops as they are so popular. Serve with plain boiled rice or Chapatis

Ingredients
- 150 g/5 oz (1/2 cup) whole moong dal
- 600 ml/1 pint (2½ cup) water
- Salt to taste
- Chili powder to taste
- ½ teaspoon turmeric
- 2–3 ripe tomatoes
- Small piece fresh root ginger
- 1 teaspoon dried mango powder
- ½ teaspoon ground cumin
- 2-3 curry leaves
Thoroughly wash and rinse the dal. Drain and place them in a saucepan with the water, salt, chili powder and turmeric. Bring to the boil, reduce the heat and cover the pan.
Simmer the dal for approximately 40 minutes until they are tender but retain their shape. By now most of the water should have been absorbed.
Quarter the tomatoes, finely chop the ginger and stir into the dal together with the mango powder, cumin, and curry leaves. Stir well to mix all the ingredients. Cover and cook over low heat for another few minutes before serving
