Amras
This is ripe mango juice, a great favourite in summers. There are some varieties of mangoes, which are best for amras. Try to get one of these.
You will need –
- ripe mango
- salt
- Sugar
Method:
- Wash the fruit and with your thumb on the stem side, press the fruit all around, turning it at the same time in your hands; Remove the juice and pass it through the mixer for a few seconds to break any lumps.
- Wash the seeds in a little milk and add it to the amras. Add a pinch of salt. Taste the sourness and if necessary, add sugar.
- If the amras is too sour, add a pinch of soda-bi-carb. Keep in the fridge till serving time. As the yield of juice differs greatly from fruit to fruit it is difficult to say how many mangoes you will need; but 1- 1/2 cup of juice per person should be ample.
