Nepali Eggs
You will need –
8 eggs (one per person), 3 medium sized onions minced finely, 6 to 8 petals of garlic and one inch piece of ginger ground to a paste, 3 tsps. of dhana-jira powder, 1 tsp. chilli powder, 1/2 tsp. turmeric, salt to taste, 2-1/2 tblsp. oil.
Method :
Hard boil the eggs. When cool, shell them and prick all over with a fork. Heat the oil, add minced onions and fry till golden brown. Add turmeric, chilli powder and dhana-jira powder, fry again. Add a cup of water and cook on low heat till the onions are soft and pulpy. Add salt and 1/2 cup water, and then add the eggs. Cook till thick gravy remains.
