Lassi (sweet)
You will need – Fresh curds (preferably with cream), Sugar to taste, pinch of salt.
Method: Beat up the curds, add the salt and sugar and churn manually or whip up in a mixer, adding enough water to make a thick, creamy drink. In summer add a few ice cubes.

Lassi (salty)
You will need – Fresh curds (of 1 litre milk), one inch piece of ginger, 1 tsp. cumin seeds, salt to taste, juice of half a lemon (optional).
Method : Beat up the curds. Grind the ginger and cumin seed and add to the curds. Add salt. Lemon juice should be added if the curds are very fresh and not sour enough. Churn manually or whip up in a mixer, adding enough water to make a drink thicker than milk.

Lassi (salty, another way)
You will need – Curds made from 1 litre milk, 1 medium sized onion, 1/2 cup finely chopped coriander leaves, salt to taste, tsp. cumin seed powder.
Method : Grate the onion or chop it very finely. Add all the ingredients to the curds and churn or whip up in a mixer, adding enough water to make #drink thicker than milk.
