Tandalja Bhaji
You will need –
750 gms of Tandalja, 2 medium sized potatoes, 8 petals garlic, 3 dry red chillies (or chilli powder to taste), 2 tblsp. oil, 3/4 tsp. mustard seeds, 1/2 tsp. turmeric, 1/4 tsp. asafoetida, salt to taste.
Method :
Clean and wash the leaves thoroughly, drain and chop finely. Peel and cut the potatoes in small cubes. Heat the oil, add the mustard, asafoetida and garlic. When garlic starts changing colour, add the turmeric and potatoes. Fry a while. Add the chopped tandalja and salt. Mix well, reduce the heat, cover and cook; stirring once in a while, till done. The vegetable, when done, should be moist but not watery.
