Bhindi with Onions
You will need –
500 gms bhindi (ladies fingers), 250 gms onions, 6 green chillies, 1/2 inch ginger, salt and amchur (dried mango powder, available at the grocer’s) to taste, 4 tblsp. oil, 1/2 tsp. turmeric.
Method :
Bhendi should always be washed and wiped dry before using. Cut the Bhendi in long (about 2 inches) pieces. Slice the onions thin. Also slice the ginger and chillies in thin long strips. Heat the oil, put in the ginger and chilli pieces, then the onions and fry a while. Add 1/2 tsp. turmeric (optional) then add the bhendi and salt. Mix well and cook on low heat, stirring frequently. Do not cover for too long. As far as possible, cook uncovered. When done, add the amchur powder, mix and remove.
