Palak (Spinach) Cutlets
You will need –
- 400 gms palak
- 250 gms potatoes
- one medium sized onion
- 3/4 inch ginger
- 4 green chilies
- 6 petals garlic
- 1 tsp. amchur (dried mango powder)
- salt to taste
- 1 egg
- 1 cup breadcrumbs
- oil for frying
Method:
- Boil, peel and mash the potatoes while still hot. Wash and chop the palak very finely. Chop the onion and fry it in a little oil till light brown.
- Grind ginger, garlic and chilies together and add to the onion, and fry again. Add the chopped palak and salt, and cook uncovered, till dry.
- Remove, add amchur and mashed potatoes. Mix well. Divide into small orange sized portions. Roll in beaten egg and then in bread crumbs.
- Flatten into a cutlet shape and shallow fry till crisp and brown. Serve with tomato ketchup.
